Best Ever Meat Marinade

Diana Stafford, MD

Here is my recipe for the most delicious meat marinade that never fails to yield the moistest meat you'll eat! Video to come but I wanted to make sure you all had this recipe before Cinco de Mayo!

3 cloves garlic, minced

2 t chili powder

2 t ground cumin

1 t black pepper

1 t paprika

1/2 t oregano

1/2 bunch fresh cilantro, chopped

1/4 cup lemon juice

1/4 cup lime juice

3 T soy sauce

3T olive oil

Optional: chipotle pepper, 1/4 cup orange juice

1 pound flank steak or 1 lb chicken

Combine all marinade ingredients in a plastic bag or your choice of container.

Pound the meat (to 3/4 inch thick for chicken or 1/4 inch thick for beef) and if using beef poke holes all over with a fork.

Reserve some marinade if you'd like to pour over for serving, and add the meat to the marinade. Marinate at least one hour and up to 24 hours prior to cooking! Enjoy!
