Adding More Diversity of Plants to Your Family's Diet

As mentioned in my youtube video, here are some vegetable medleys that I have tried in the past two weeks:


Asparagus chopped, leeks chopped, chopped portabella mushrooms, minced garlic and frozen peas added to the pan and sauteed in half butter half olive oil. Add steamed broccoli and green beans - cut the green beans to the same size as the asparagus if your kids don't like one or the other :)


Roasted sweet potatoes, radishes and parsnips. Cover with foil for the first 30 minutes then uncover.


Sauteed in a pan: eggplant cut into small cubes, zucchini cut into small cubes, your choice of mushrooms chopped, green onions, minced garlic, red pepper, fresh basil (added last) and tomatoes either added to the saute ingredients or just as tomato sauce.


The possibilities are endless!
